18 years old and im working under Tom callacho(bald judge for top chef, and owner of the craft chain) and damon wise(executive chef of new york branch) making 11 an hour ha ha 16.50 yesterday holiday pay! my legs are killing me but its a good thing! on saturday i worked fifteen hours and yesterday twelve! Its my foot in the door and a way to save for cia by winter, and chef john said when im at school if i want to come home for the weekend i can work weekends. my title is prep cook but my friend and mentor is a butcher and im training under him too so next step up is butcher! i want to be on line, but i have a ways to go and classic french, and brigade set up is hard to get used to! "Im rolling with the big boys now so dont fuck it up!" ha ha ha that i am and im so fucking glad!!! ha ha and i found out i can devain swiss chard for four hours and not go insane! its alot of work but im already getting used to it.... i can talk about that place for hours though, im not going to right now but im sure i will have alot more stories really soon!
